Zucchini Yum

This month we continue to explore foods that are good for the heart. Zucchini is one of the best foods you can eat to enhance and support heart health. I love how easy it is to cut and cook, or simply eat raw. Try cutting it into wedges and serving it with your favorite dip.


This is a recipe I created to serve to friends at a last minute gathering. I served it on a bed of dark greens, navy beans and the ancient grain sorghum. My guests loved it.


2 zucchini cut into bite size pieces

2 chopped scallions

1 c small tomatoes

1 T muun chi Sweet Immunity original

1/4 c muun chi Lemon Pesto

1 T avocado oil


Warm the oil and toss your scallions and zucchini till tender. This only takes about 3-5 minutes. I think of it as a stir-fry. You want your veggies to be crunchy, yet tender.


Add your tomatoes, Sweet Immunity and Lemon Pesto. Gently toss until all your zucchini are covered in the sauce. Serve on top of your favorite bed of greens, grains or beans. Your gut microbes will be happy and thankful! Enjoy!
