Simple Summer Salad

This is a salad that is all about fresh, seasonal fruits and veggies. I love to combine the two! All the plants in this salad provide nutrients that enhance the skin and support the gut.
2 c diced cucumbers
2 c diced watermelon
1 diced orange pepper
1/2 c chopped mint
Juice of 1/2 lime
1/4 c chopped red onion
Combine all the ingredients with a splash of olive oil.
Add a chopped apple, pomegranate seeds, grapes… the possibilities are endless. I love to finish it with a sprinkle of sesame seeds. Happy gut, happy skin!
