Holiday Salad

This month we will be offering recipes you may choose to include on your holiday table or as part of the holiday cheer. It’s also a great addition to a potluck.

This is a fun, easy salad that supports the gut and the thyroid.  If you have the quinoa already cooked, this salad takes about 10 minutes to prepare.


Dressing:

3 T fresh lime juice

2 T olive oil

1 clove garlic, minced or 1 T muun chi Fermented Roots

Salt and pepper to taste


Salad:

3 c cooked quinoa, cooled and fluffed

2-3 med sized ripe avocado, cut into cubes

1 c diced cucumber, skin on

1 c grape tomatoes, halved

½ c chopped basil or parsley

2 scallion stalks thinly sliced

Optional dollops of goat cheese or feta

 

Gently toss all the ingredients right before serving. I love this salad because you can have it fully prepped and then toss last minute.  You may even choose to layer the different colorful veggies in a clear glass bowl and toss at the table.  If you do decide to prep in advance be sure to toss the avocado in lime juice to keep them from browning, or better yet, add them freshly cut right before serving. Enjoy!!
