End of Summer Salad

Oh please don’t end. Dear summer you are such a blessing. Your long days and warm gentle evenings… your glorious sunrises and colorful sunsets! …you are nature in her prime!! But the cycle continues and it’s time to love our season of new beginnings. It’s time to say goodbye to watermelons and peaches and welcome In pumpkins and squash! I love this salad because it incorporates all of summer in one bowl.


This month I will be sharing recipes in a bowls. These may be salads or veggie bowls, but dishes that are easily tossed together, packed with protein and fiber.


Mix in a bowl


1/2 small red onion, very thinly sliced

10 to 12 ounces baby arugula (I think 1 loosely packed cup equals about 1 ounce)

2 medium ripe peaches, pitted and thinly sliced, with the skin on

2 medium ripe avocados, diced or sliced

1/2 c muun chi nondairy cheese - plain is my fave in this dish… dollop on the salad as you would a burrata

2/3 cup crushed pistachios

1/3 c hemp seeds, sprinkled throughout


Lemon Dressing:


Whisk these ingredients together in a small bowl until well combined


¼ cup extra virgin olive oil cold pressed

¼ cup freshly squeezed lemon juice (about 2 lemons)

½ teaspoon muun chi Fermented Roots mixed with 1 tsp muun chi CoCoFir

Salt and pepper to taste


Smell summer as you toss this salad and listen to your heart sing in gratitude for all that this wonderful season provides. I love to serve this salad to friends and and family knowing that our guts will be thanking us. Enjoy!!
