Yummy Arugula Peach Salad


The simplicity of summer. The simplicity of salad. This is what makes me so happy. You toss ingredients together, and suddenly you have something that nature provides in her most elemental form that feeds your soul, your gut and all the people around you.


4 cups of arugula

1 1/2 c white beans

1 c shredded carrots

2 diced peaches or nectarines, leave the peels on (I love the white nectarines this time of year!)


muun chi Almond Butter Dressing with an extra drizzle muun chi fermented honey


Throw all your ingredients in a bowl. Toss gently and drizzle your dressing on top. Let the ingredients speak to each other and to you ... The bitters of the arugula will be so good for your lymph, liver, gallbladder and bile. Yes, this month we are focusing on keeping our livers and gallbladders happy and clean. Happy eating!
