Vegan patties with a kick

I’ll be spending the last day of 2020 and the first day of the new with my dad who can always use a little more probiotics in his gut. This recipe is in honor of my dad who is 93 and a very picky eater. I wonder if he’ll notice that there’s no meat in these? Hehe...

  • 1 1/2 c your favorite beans. I like to use the red azuki but any bean works!

  • 1 ½ cups fermented muun chi beets

  • 1 Tbsp muun chi fermented fig butter or almond butter

  • 1-3 Tbsp muun chi UPnola (no grain granola)

  • 1 large shallot

  • 1 ½ cups loosely packed cilantro with stems

  • 2 tsp ground cumin

  • 1/2 sea salt

  • 1-3 Tbsp avocado for your cast iron pan

I threw all these ingredients except the avocado oil into my food processor, being sure not to over process. You don’t want the patties to be mushy. Form into 1 1/2 inch balls and flatten into patties. I like to keep them small so they are easier to cook while allowing the outsides to get a little crispy. If you want the patties to be drier, just pop them in the oven for at 375 for another 5-10 minutes. These do well in your fridge and can easily be your ’go to’ I’m too tired to cook meal.


I love to eat these on top of a bunch of fresh greens topped with a simple dressing made from muun chi CoCoFir:


1/2 c muun chi CoCoFir

fresh dill and pressed garlic

a splash of muun chi Kvass
