Nothing Sweet, Sweet Potato


I remember making our sweet potato casserole back in the day – tons of brown sugar, butter and marshmallows!! There is nothing sweet in this dish except for the magical sweet potato itself. There are so many health benefits of the sweet potato, including beta carotene for the eyes. Great for the heart, blood sugar management, gut, skin, hair… I guess we should be asking – what does it not do? No wonder Dr. Zach Bush chooses the sweet potato as his food of choice if he could eat just one food.

 

3 large sweet potatoes - thinly sliced

“Cheese” Layer

·       3-4 Tbsp extra virgin olive oil 

·       1 whole lemon with peel and seeds

·       12 ounces extra-firm tofu, drained, pressed and crumbled

·       3 Tbsp nutritional yeast   

·       1/2 cup loosely packed fresh basil

·       1/4 c ground cashews

·       2 T muun chi lemon chia pudding

Basil Sauce 

·       1/2 cup olive oil

·       7 oz muun chi Spirulina Basil Walnut Hunmus

Optional - add more roughly chopped walnut if you want it nuttier.

 

Preheat oven to 350 degrees.

Alternate layering these three just like you are making a lasagna  in a 13x9 inch glass pan. Begin with a little olive oil spread on the bottom, then the sweet potato, then the cheese, then the basil sauce.  End with a layer of sweet potatoe. Top with a sprinkle of vegan Parmesan cheese (crumbled cashews with nutritional yeast … recipe on the website) Cover the dish with either parchment paper, silicone mat or a baking tray. (They are finding aluminum foil to have possible metal residue)

Place in the oven for 50 minutes, remove cover, then increase to 400 degrees for 8-10 minutes.  Serve warm. The beauty of this dish is that you may make days ahead and freeze until ready to use.  Happy happy thanksgiving!!! Enjoy!!
