Unbeetable BeetChi Pancakes

I have two new helpers at the market now. Oh joy! - the most wonderful human beings ever! Syrita is helping me on Saturdays in Marina del Rey and Shannon on Thursdays in Redondo Beach. Shannon is dating a young man from Korea, and shared her recipe for Kimchee pancakes. Thank you Shannon!


1/4 c chickpea flour

1/4 c tapioca flour

1/4 c muun chi CoCoFir


Stir these three ingredients to gently combine. Do not over stir.


Add a small jar of muun chi Beet Chi, about 1 cup. Stir to combine.


Heat a cast iron pan to medium high, grease with avocado oil, and plop spoonfuls onto the skillet. Brown on each side, flipping after about 2-3 minutes.


Makes about 4 pancakes.


These are a wonderful go-to snack you can bring with you instead of a sandwich. Packed with great fiber and super micro bacteria that will help keep your gut balanced and happy!
