The Famous Ukraine Borscht

To be honest with you, I had not had a borscht until I read how much it is loved by the Ukraines, and I decided to give it a go. I love beets so much mostly because they have so many wonderful health benefits!!! Nature gave us beets to keep our vascular system at its best.


I made the mix of peppers, celery and onions first and let them simmer with some tomato paste.


Simmer the following in a small sauce pan

with a bay leaf, salt and pepper

  • 2 celery ribs finely chopped

  • 1 small red bell pepper roughly chopped

  • 1 medium onion roughly chopped

  • 2 T tomato paste


Wash 3 medium beets, grate them in your food processor and in a large pot add them to


  • 4 Tbsp olive oil


Stir for 3 minutes til fragrant, then add


  • 8 cups veggie broth

  • 3 medium yukon potatoes cut into 1” cubes

  • 2 carrots thinly sliced‘


If you want to add a little protein consider

  • 1 1/2 c white cannelini beans


Add the mix from your saucepan to the pot and cook on med til tender - about 30 minutes.

Add 2 T. Vinegar or muun chi Kvass. Serve with a dollop of CoCoFir, and fresh chopped dill. Invite your friends to share a little love from Ukraine, close your eyes and pray for our friends.
