Super Seed Crunch

I recently listened to a podcast where scientists were able to isolate a beneficial bacterium that loves to eat nuts and seeds. People with balanced microbiota have this bacteria in their guts.  This recipe is in honor of these bacteria.  It’s such a newly disclosed  microorganism that it doesn’t even have a name yet.

How cool is that?

¼ c pumpkin seeds

¼ c sunflower seeds

¼  c chopped walnuts

¼  c chopped pecans

¼  c chopped sliced almonds

3 T olive oil or avocado oil

½ c roughly chopped dates

1 T muun chi Fermented Roots

Roughly ground black pepper or chili peppers

Pour the oil in a pan. Add the Fermented Roots. Heat to medium high. Pour the nuts and stir for 3-4 min, add freshly ground black pepper – I love about ten twists. Stir for another 3-4 minutes til the nut mixture is toasty and crisp.  Be careful not to overcook.  Nuts can burn easily.  Be patient and mindful as you watch and smell these nuts pan roast. Add the chopped dates and stir til combined for another 2-3 minutes.

Pour this mixture on your favorite vegetable or salad.

½ c of this mix has about 7 grams of protein.  You will love getting creative with this mix. I recently used it on my green bean  stir fry and it was yummy! I use it as a protein boost on salads and bowls and now I can think about how I’m feeding the good bacteria in my gut! Enjoy!
