Dairy Free Gravy

You are going to love this recipe.  It’s a gravy that will have everyone wondering “why did it take me so long to become plant forward?” There is no dairy, no turkey fat, no turkey broth… just good mushrooms and herbs and of course muun chi CoCoFir!


2 tbsp olive oil or vegan butter

1 2 shallots, finely diced

3 cloves garlic, minced

12 oz (340 g) mushrooms, finely chopped (I like the blend of cremini + shiitake

1 c of white navy bean, cooked

2 cups vegetable broth

1 tbsp coconut aminos

1–2 tsp fresh thyme

½ tsp freshly ground black pepper

1 tsp nutritional yeast

1/2 c muun chi CoCoFir

1 tsp miso paste

1–2 tsp muun chi kvass

Salt to taste


Saute chopped shallots and garlic til fragrant. Add the chopped mushrooms and let simmer for 8-10 minutes.  Nice and slow.


Mix thyme, coconut aminos, nutritional yeast and miso paste.  Add herb mix to the mushroom mix.


Blend the white navy bean with the broth til smooth.  Add this mixture to the mushroom herb mix and stir til combined. Garnish with fresh parsley and serve with your mashed potatoes and NutLoaf. As your body says thank you., you will feel the difference in every bite. May you enjoy your holidays with microbes that bless you.
