Refreshing, Delicious and a little Dill

Updated: May 10, 2021

While I was at the market yesterday, one of my regulars stopped by to order a large CoCoFir. When I asked her what she likes about it, she shared that she loves its versatility and how she can use it in so many different ways. She also loves that it doesn’t have any preservatives or sugar. I asked her if I could share one of her favorite uses of our top seller.

Hallelujah’s Tzatziki (Yes, doesn’t she have an awesome name?)

Peel and seed a cucumber (save the seeds and peels and put it in your freezer compost for a future broth)

Chop into 1/4 inch pieces and combine with

1 cup muun chi CoCoFir

  • the juice of 1/2 a lemon

  • 1 clove garlic, minced

  • 2 tablespoons chopped fresh dill

  • 1/4 teaspoon Himalayan pink salt

  • 1/4 teaspoon freshly ground black pepper

I like this to sit overnight to let the flavors combine, but of course can be eaten right away as well! Garnish with chopped fresh dill sprinkled on top.

Enjoy with your favorite pita, veggies or as a side to your favorite salad.
