Quick and Easy Lemon ‘Pasta’

It's the holidays and we're all running around trying to get ready for the festivities that come from our hearts. It's the sharing of love and gratitude that are abundant during these times. I'm always thinking of ways to make our lives a little easier without forgoeing the health benefits real food provide.


I found lovely bags of Kohlrabi spiralized noodles at Trader Joe's recently. They aren't organic, but every once in a while if it's not a common vegetable or fruit, that is in high demand, I tell myself that it's ok to eat since the likelihood of it being treated with chemicals and pesticides is less.


1 bag of spiralized Kohlrabi

1 jar of muun chi turmeric lemon chia pudding

1 Minced garlic cloves

1 T olive or avocado oil

1/2 c pomegranate seeds

1/2 c chopped basil or thyme


I started by warming my oil with the garlic. Added the pudding to warm but not hot, to keep the microorganims alive. Then I added the spiralized Kohlrabi, stirred with the fresh basil. I served the dish with the pomegranate seeds sprinkled on top. Try adding some chopped tomatoes or peppers. It was simple and delicious and pretty enough to serve at the holiday table.
