Not everyone knows about the powerhouse Brazil nut. It is packed with selenium which is so good for our immune system, thyroid and cell growth, not to mention sleep:). It's nutty flavor makes for a terrific pesto. Enjoy over your favorite pasta, rice or pizza, or spiralized veggies. For this recipe, I used it on some purple barley. As many of you know, I've been focused on eating the rainbow. When I saw 'purple' barley, I thought to myself, 'what a fun way to add some more color into my food!
I served this pesto over my barley, and added matchstick yellow beets, sliced zucchini, grape tomatoes, chopped avocado and thyme.
1/2 cup raw Brazil nuts soaked in water for a couple of hours, then drained
3 packed cups fresh basil
2 T olive oil
1/3 cup chopped parsley
1/2 cup CoCoFir
2 - 4 cloves of garlic
2 tbsp nutritional yeast
1 tsp Himalayan pink salt
1/4 tsp black pepper
a small lemon, minus the seeds
After you have drained the nuts, pour them into a food processor with the lemon, chop in the processor. Then add the rest of the ingredients, and rough chop in the food processor til you get the consistency you desire. Serve this on any pasta, or on its own as a dipping sauce. Enjoy!!!
