muun chi version of a Mendocino Farms signature dish

My daughter directs marketing for Mendocino Farms. She generously donated her credits to muun chi to help us celebrate our grand opening ! Such a wonderful addition to our spread! Thank you Mendocino Farms and Riki! Everyone loved their couscous! Here's the muun chi version of a very yummy side dish. Add the white navy bean and make it into a main dish, packed with protein and fiber.

Use a food processor to make your cauliflower rice.


2 heads of cauliflower broken into small pieces

4 carrots


Mix the following ingredients in blender


2 T curry powder
 2 inches of turmeric root
 1 T each of cumin, ground ginger and coriander
1 tsp cayenne pepper and cinnamon

Mix into your spices the following:


1 T olive oil

1 cup CoCoFir or Lemon Chia Pudding or Turmeric Ginger Fauxmage

1/2 c dates

1/2 c white navy bean

1/2 bunch cilantro, chopped
1/2 lime juice or muun chi Golden Tumeric Kvass

Salt and pepper to taste

 

Toss all your ingredients together and serve with a side of muun chi Muunkraut or Beetchi. This salad has a kick and crunch. It's a fun dish to serve your guests because you don't have to worry about leftovers - it will be gone;)
