I'm in New York City with my grandchildren for the week of gratitude. I'm in heaven. It's been nonstop play and laughter. This morning we woke up and made Gigi's Apple Cake, upon Mina's request. It's made with no refined sugar, lots of ground nuts, apples, and no eggs. Mina loves to eat the batter, and because it has no eggs, I let her have as much as she desires while she helps me mix.
Preheat oven to 350 degrees
3 apples roughly chopped in the food processor
4 flax eggs (each egg is 1 T ground flax with 3 T water)
1/2 c apple sauce unsweetened or Pumpkin Cinnamon Chia Pudding
1/4 c almond butter
6 dates soaked in warm water
3 cups ground nuts
1/2 tsp baking soda
1 T cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
Add the flax eggs with the almond buttter and dates. Puree in the food processor. Set aside.
Mix the dry ingredients - ground nuts and baking soda.
Add the 2 cups of the chopped apples and spices, and the applesauce into the almond butter mixture, alternating with the dry ingredients.
Fold in until all are combined, then top with the remaining cup of chopped apples that have been seasoned with the spices.
Put in a 8" round cake pan. Bake for 1 hour in a 350 degree oven. Mina loves to eat these as mini-muffins dipped in the Lemon Chia Pudding or the Pumpking Cinnamon Chia Pudding. A nice little dessert to add to the Thanksgiving feast.
