Mango Probiotic Vinaigrette

This is a dressing my friends ask me to make this time of year when mangoes can be found everywhere. It’s easy and delicious and packed with digestive enzymes and vitamin C. Great for the hair and skin as well as helping to lower my cholesterol.


1 small Adolfo mango with peel

1 clove garlic

2 T golden Kvass

5 T olive oil

1 T muun chi CoCoFir

Fresh lemon juice is optional


Deseed the mango, purée all the ingredients in a small food processor or use an emulsifier.

When all combined, season with salt and pepper.

This is a fun dressing that goes well on an arugula and beet salad sprinkled with pine nuts or your favorite chopped nut.
