2 medium zucchini, spiralized - I used one yellow and one green..
4 ounces muun chi lemon chia pudding
2 cloves garlic chopped
Optional:
1 cup arugula
1 cup sliced mushroom, sautéed
Bake your zucchini in a 400 degree oven for 6 minutes. Toss with garlic and lemon chia pudding.
Serve over a bed of arugula and mushrooms.
