Lemon Chia Zoodles

This is a dish for those who are short on time. It is so delicious and easy to make. Your gut will be singing with joy as this probiotic/prebiotic dish strengthens the gut lining and promotes the production of short chain fatty acids.

2 medium zucchini, spiralized - I used one yellow and one green..

4 ounces muun chi lemon chia pudding

2 cloves garlic chopped


1 cup arugula

1 cup sliced mushroom, sautéed

Bake your zucchini in a 400 degree oven for 6 minutes. Toss with garlic and lemon chia pudding.

Serve over a bed of arugula and mushrooms.
