ABC Salad

When you’re around a toddler as much as I am, you end up singing the ABC s more than you could ever imagine - that, and negotiating “it’s time to leave…”

Kids love engaging in play and singing!


This is a salad Sonny loves -Apples, Beets and Cauliflower. Feel free to add a variety of veggies! Remember the more colors the better it is for you!


1 large Granny Smith Apple

1 med Beet, gold or red

1 small head of Cauliflower


Chop these three ingredients in your food processor to the size of grains of rice.

Toss to combine.


1/2 bunch parsley, chopped

1 cup muun chi Lemon Chia Pudding

2 T muun chi Sweet Immunity

3 scallions, chopped

2 T muun chi Golden Turmeric Kvass or apple cider vinegar

2 tsp curry

1/2 tsp cayenne pepper

1/2 tsp cinnamon

1/2 c white navy bean (cooked in a pressure cooker)

Salt and pepper to taste


Mix the sauce with the riced veggies and combine thoroughly.


Sonny loves to help make this salad. If you want even more crunch, add some celery or carrots! If it seems dry, add a squeeze of lime or some olive oil.

You may choose to serve it with your favorite greens or with chopped up avocado or stuff an acorn squash! Let your child give you some ideas… go wild and have fun!
