Easy Lemon Turmeric Rice

You may have heard about the rice hack that turns white rice into a resistant starch. Cook your rice, but instead of eating it that day, put it in the fridge overnight for at least 8 hours and then eat it the next day. The rice goes through a molecular change and instead of spiking your sugar levels, it transforms into a resistant starch that is now great food for your beneficial microbes. You may eat the rice cold, or warm it up.


2 cups cooked rice

Warm this rice on the stovetop with a couple of teaspoons of water

When the rice is warm ( not hotter than 115 degrees so as not to kill the beneficial bacteria)

add 8 oz of Lemon Turmeric Chia Pudding

Garnish with chopped cilantro


Serve with your favorite curry dish. You have transformed your rice to a dish that is now producing short chain fatty acids that will be so good for the lining of your gut. Enjoy!!!
