CoCoFir Pancakes

My son, Tai, and his wife are visiting for a couple of weeks. They are pure JOY! They are so good with children and are gong to be such a good help for my daughter, Riki, as her husband returns back to work this week.


We celebrated Tai’s 33rd birthday yesterday starting with ‘breakfast in bed’. This is a tradition we started when they were young. He got out of bed before I could get the pancakes served, so we had a little pancake picnic sitting on the living room floor.


Mix your dry ingredients:


  • 2 cups gluten-free flour

  • 2 Tbsp flax meal

  • 1 1/2 Tbsp baking powder

  • 1 tsp sea salt

  • 1 1/2 tsp ground cinnamon, ginger, nutmeg blend


Mix together your wet ingredients


  • 2 medium ripe bananas

  • 3 Tbsp melted coconut oil

  • 1 1/2 Tbsp vanilla extract

  • 2 1/4 cups non-dairy CoCoFir


Gently fold in the wet with the dry, being mindful not to overstir. Heat your griddle to the point where drops of water dance when dropped on the grill. My son likes to eat dollar size pancakes, but feel free to make them as large as you wish. Serve with fresh fruit and organic maple syrup for some serious fun.

Mmm. Sounds yummy!! We’ve been enjoying the cacao kefir! My hubbie likes to use it in his overnight oats and I add it to my daily smoothie. Thank you, Manette ❤️
