Chia Pudding with a Zing


It’s summer! And there are lemons, blueberries and watermelon everywhere! Oh joy! This week I’m using lemons from my tree, I’ve got gobs of them! Lemons are a wonderful source of Vitamin C, potassium, carotene and calcium. Vitamin C is critical for the absorption of iron in the diet. I’m using the pith of the peel in this recipe. The peel is insoluable, helping to increase the stool weight and may help reduce the risk of colon cancer.


1/2 c muun chi CoCoFir

juice of one lemon plus the peel zested including the pith

1/4 c chia seed

touch of salt

1/4 tsp turmeric root finely grated


Combine the above ingredients and let sit overnight. In the morning you may eat it right out of the bowl. I love plopping right on top of my blueberries and watermelon for a nice little summer treat. Enjoy!!! Your gut will be singing lots of gratitude today!!!
