Baby’s First Birthday Cake

It’s a tradition in our family to make a smash cake for the baby’s first birthday! New to the sweet experience, it’s nice to offer a cake that has no refined sugar or gluten. How is it that Sonny’s twin sisters Finny and Ruby are already one!? It’s crazy how quickly they grow! These two will have a blast exploring their first cake made with fruit and tons of love!



Preheat oven to 350 degrees.


Mix together and set aside in a medium sized bowl:


1 c spelt flour

1/2 c fonio flour

1/2 tsp baking powder


In another bowl mix:


1/2 c muun chi CoCoFir

2 flax eggs

1/2 tsp vanilla powder or extract

1 c banana pureed

1 c applesauce unsweetened and homemade is best


Pour the wet ingredients gently into the dry ingredients, folding til fully combined.


Pour into 6” round cake pans (I used the silicone bowls I have for food storage). Bake for 30 minutes or until a toothpick comes out clean. If you don’t have those, you may try making them in a flat sheet pan and then using a bowl to make your circles after the cake has cooled.


While the cake is cooking, prepare your dairy free frosting.:


One jar muun chi Lemon or Pumpkin chia seed pudding. Spread on the top with layers of banana and pudding in between. Let the cake sit for a couple of hours or overnight to set in the fridge. Have fun watching your child explore this new experience!!! (And go ahead and let them make it into a full tactile experience… some love to smash and squish, others gently eat the berries…).
