Anti-inflammatory Protein Cacao Chip Cookies

This is the last in a series of recipes offering sweet treats with zero refined sugar. My buddy Maggie makes a version of these cookies that uses sugar and eggs. I loved them so much that I eat too many and then can’t move the next day. I had to figure out how to make a non-inflammatory version so I could share them with all my friends. Thanks Maggie for being such an inspiration in my life!!
Preheat oven to 350 degrees.
1 c of the highest quality almond butter (nothing added…. Just organic almonds) or you may choose to mix hemp, chia, walnut, pecan, Brazil nut, almond, sunflower, and make your own nut and seed butter!)
1 c deglet dates
1 flax egg
3/4 c mini 100 % cacao chips (nothing added sugar, no dairy)
Make the flax egg with 1 T ground flax mixed with 3 T water. Let sit for 10 minutes.
Blend the dates and the almond butter in the food processor until smooth and fully combined. Add the flax egg and stir. Fold in the cacao chips. Form into balls and flatten to make cookies.
Bake for 10-12 minutes. Let cool and enjoy this nutrient dense treat. It is so good for your gut and lean muscles and your friends will love them!
