I had a ton of leftover bananas so I decided to make a mousse out of it. This creamy dessert/breakfast is packed with protein, potassium, magnesium and great fiber.

1 c cooked white navy bean (canned is fine as well)

2 bananas

1/2 c almonds

1/3 c muun chi CoCoFir

Throw all the ingredients into a blender. Blend until smooth. Pour into serving cup and place in the fridge until set.

Sprinkle with cacao nibs or your favorite chocolate chips (optional), or a dollop of the muun chi Raw Cacao Mousse your favorite chopped nuts and you have an almond butter cup treat packed with protein and gut goodness::). Enjoy!
