A Srynyky Ukraine favorite

Everyday I wake thinking about our friends in Ukraine. I’m sure you too are wishing for ways we could help. Sometimes just learning something about another culture, brings me peace and connects me with a people I don’t know.


I have found that one of Ukraine’s favorite desserts is a sweet pancake that is has raisins throughout, and is served with cream and fruit. My version of a Srynyky is gluten free, no refined sugar, nondairy and is served with muun chi CoCoFir.


2 cups 2 week old CoCoFir (you may notice as your CoCoFir ages, it thickens, perfect for this recipe)

4 vegan eggs (make a vegan egg using 1T ground flax with 3T water, let sit for 15 minutes)

3/4 cups garbanzo and fava bean flour blend, plus about 1/2 cup more for dredging

3 medjool dates

1/2 tsp salt

1 tsp baking soda

1 tsp muun chi golden kvass

1 cup raisins

2-3 Tbsp extra light olive oil for each batch


Mix your medjool dates with the vegan eggs mixture in a small blender. This should resemble a thick paste. Add your CoCoFir and blend.


Add the salt, baking soda with your gluten free flour. Add the CoCoFir mix to your flour mix. Try not to over mix. Fold in your raisins. Form your dough into small 3” patties, using the extra flour to keep the dough from sticking to everything, including your hands!


On a medium high skillet, warm your olive oil. Drop a sprinkle of water to the hot oil, when it dances, its the perfect temperature for the pancakes.


Serve with your fluffy CoCoFir and your favorite berries while you think sweet thoughts for our friends in Ukraine.
