Mandarin Delight

When it’s hot outside and we want to cool down quickly, so often we reach for ice cream – a dessert that is packed with refined sugar and dairy.  After visiting the farmers market, I found some beautiful mandarin clementines.  I decided to create an ice cold treat with them. The kids loved it!


6 mandarins orange peeled and frozen

2 mandarins frozen with the peel on

1 c muun chi CoCoFir

1 squeeze of lime


Freeze the orange segments for a few hours.  Put the frozen sections in a blender, add the cocofir and lime. Blend til icy and smooth. Eat straight away or return to the freezer for an hour. Serve in small bowls or as a pop. The kids and adults will find the cold treat so refreshing! And your gut won’t get inflamed.  It’s a fiber rich, microbe rich, yummy dessert sure to cool you down.
