Weekends with sonny are such a treat! This weekend he requested that we make waffles so I made a version that contains kefir and some healthy grains. He loved them. They are best served as fluffy pancakes but we made them into waffles because Sonny loves operating the waffle maker..hehe.
1 c Fonio flour
1 c Himalayan Buckwheat Flour
(You may use 2 c flour of your choice)
3 aquafaba eggs (flax eggs work as well)
3 T chia seeds
2 c muun chi CoCoFir
1 tbp baking soda
Combine all the ingredients and stir into a thick batter. Over a medium hot grill or pan fry your cakes using a good avocado or coconut oil. They should be a nice golden color with a slight green from the Himalayan flour we used. The flours we used are gluten free and packed with nutrients. Enjoy!
