Jen’s Fried Rice

Out muun chi friend, Jen, recenty shared the recipe for her delicious fried rice. A couple of months age, she had brought this yummy dish to a potluck and it was such a hit! You will love it!


1 sweet onion, diced

1 bunch of green onions, chopped whites and greens

1 carrot, diced

1 red bell pepper, diced

1 cup of broccoli, chopped including the stem

1 cup of mushrooms, chopped

6 garlic cloves, minced

.1/4 stem fresh ginger root

1/3 cup coco aminos

1 tablespoon of coconut oil

Handful of cilantro, chopped

2 c Jasmine rice cooked the day before and chilled



Sauté  garlic, ginger, onions in a pan (preferably a wok) with coconut oil. Cook for 5-8 minutes. Add vegetables. Cook for 5-8 minutes


Add rice & coco aminos. Turn off heat & add cilantro.


If you want to add a little crunch, add some chopped celery and jicama. If you want some protein try adding some edamame or tofu. I took a shortcut and used muun chi fermented roots instead of chopping garlic. Thank you Jen for a wonderful fried rice!
