In honor of a great man

I woke up today thinking about Martin Luther King and all the lessons he provided our ailing country. How I wish he were around today. We certainly could learn from his experience and example, and humility.

I googled MLK’s favorite food and set out to make cornbread and black eyed peas In honor of this great man! What I discovered is that I could substitute bacon drippings with coconut oil, flour with upcycled pureed orange peel and buttermilk with muun chi vegan kefir!

It was delicious! Moist, dense and packed

with flavor from real food, nothing artificial or

processed and so good for you! YUMMMM
