Mango and Cucumber Salad

The sun is out and we gotta eat the mangoes while they are still around!

This is a fun salsa salad you can serve as a salsa or as the main dish.. I like to add some protein if it is the main.  The salsa is refreshing and the different flavors merge to awaken all your tastebuds - Lots of polyphenols and fiber in this dish that your gut bugs will love!


Prep your fruit and veggies.


2-3 large mangos chopped and cubed

2 large cucumbers cubed with the skin and seeds - I love the crunchy English ones

1 cup cherry tomatoes, quartered

1 chopped jalapeno (optional)

1 small shallot minced

1 small red onion minced 2 Tbsp finely minced shallot

1 T muun chi Fermented Roots or Peels depending on what flavor profile you seek - spicy or sweet


Toss all these ingredients together and serve with muun chi crackers or your favorite crunchy veggie.  Throw in some leafy greens to make a yummy salad or toss in some of your favorite beans.  Try the black bean if you want to make a more south of the border flair.


Finish with


2 Tbsp chopped cilantro or parsley

2 Tbsp lime juice or muun chi Golden Kvass

Extra splash of muun chi Fermented Roots for a little kick
