Watermelon Summer Salad

The watermelon this season has been super sweet. I decided to make a salad using this wonderful nutritious fruit. I added some crunch and zing and it turned out quite divine.


5 cups watermelon, cut into 1-inch cubes

2 cups Persian cucumber, cut into 1-inch chunks, skin on

1/4 cup very thinly sliced red onion

1/4 cup roughly chopped fresh mint leaves


Dressing:


2 T muun chi CoCoFir

1 T muun chi Fermented Roots

1 juice of a lime


Gently toss all the ingredients and top with 1/4 cup pumpkin seeds. There is something quite magical about sweet and tangy…juicy and crunchy…fruits and veggies. Enjoy!
