Happy Fourth of July “Ice Cream” Pie

This is a pie that is super easy to make and oh so delicious and refreshing.  It is the first in our series of desserts and snacks that have no refined sugars. It is packed with fiber and polyphenols and so good for you!


1 c deglet dates

1 c chopped pecans

1 c chopped walnuts

16 oz fresh strawberries

8 oz fresh blueberries

12-16 oz muun chi strawberry chia pudding

If you don’t have access to muun chi chia pudding, you may make your own - mix 1 c of your favorite plant based kefir with 1/2 c chia (let this expand for 15 minutes).



Mix the first 3 ingredients together in a bowl.  Press into a pie plate.  Pour your chia pudding onto the crust. Place your whole strawberries and blueberries into the pudding.  Let set in your fridge for a few hours. Serve with gratitude for our freedom and independence … and no refined sugar or dairy in our happy guts!
