Crunchy Probiotic Summer Slaw

I love summer!!! Fresh stone fruit are available at every farmers market. - the smell and the taste of summer all in a tiny fruit

I’m in New Hampshire with the kiddos and picnics are everyday! Little ansel loves nibbling peach scraps as I slice these divine gems!


2 peaches or nectarines - sliced into slivers

1/2 medium head of purple cabbage and green cabbage. Shredded

2 -4 shredded carrots or broccoli

1 cup finely chopped cilantro

1 jalapeño, seeded and finely diced

1 bunch green onion chopped

1/2 cup pepitas

1/4 cup slivered almonds


Dressing:


2 T extra virgin olive oil

2 T muun chi Golden Turmeric Kvass

3 T muun chi CoCoFir

1 clove garlic, finely minced

¼ teaspoon cayenne pepper, optional

Salt and pepper to taste


Toss all the ingredients in a large bowl. Let the flavors mingle. Be ready to taste summer and have your gut be in bliss! This sweet, salty, crunchy salad goes with everything summer! Try it with your favorite taco fillings.
