Creamy Cauliflower and Kale Soup

My son Tai takes after his grandfather. They both love soup. A day would not go by without a bowl of hot soup. In honor of his visit, I made a seasonal soup that would boost his immunity. It has a lemon turmeric twist as well as a hint of muun chi Sweet Immunity.

  • 1 large head cauliflower chopped and roasted in a 425 degree oven for 25 min

  • 2 T avocado oil

  • 2 T muun chi Sweet Immunity

  • Fine sea salt

  • 1 sweet onion, chopped

  • 4 stalks celery, chopped

  • 3 cloves garlic, minced

  • 4 cups vegetable broth

  • 1 bunch kale, stems and all

  • 2 c white navy bean

  • 1 c garbanzo bean

  • 1 tablespoon muun chi Golden Turmeric Kvass, or more if needed

  • 1/2 c muun chi Lemon Turmeric Chia Hummus

  • ¼ teaspoon ground nutmeg

  • For garnish: 2 tablespoons finely chopped fresh flat-leaf parsley

Sauté all your veggies in the oil and Sweet Immunity, making a nice fragrant pot of veggies. Put two cups of these veggies with the white navy beans into a blender and blend til smooth. Add the rest of the ingredients and simmer til bubbly. A cup of warm comfort food is such a nice way to end the perfect day:)
