White Bean Chili

It’s that time of year. We can’t get enough basketball! When I stop by to get my kiddy love, i try and bring some chili. If they can’t eat it now, they can save it for later. If they want to add chicken and corn, they can. It’s the perfect “get along with everyone” chili.


Sauté til fragrant the following ingredients:


1 yellow onion, roughly chopped

5 cloves garlic, minced

1 jalapeño, minced

1 diced green chili

1 - 2 c diced peppers, red, yellow, orange

1 T minced jalapeño

2 c chopped kale

1 tsp each dried oregano and chili

1/4 tsp each smoked paprika, cayenne pepper, black pepper corn


When fragrant and tender add:


1 c cooked cannellini bean

3 c cooked white navy bean

3 c veggie broth


When combined, add 1 c muun chi CoCoFir.

Stir til fully combined and creamy.


Serve with your favorite quinoa or resistant starch rice. Stuff a resistant starch potato. Get creative.

Top with your favorite toppings - chopped scallions, chopped avocado, muun chi Sweet Immunity, vegan Parmesan cheese (chopped cashews mixed with nutritional yeast).
