Avocados are in abundance this time of year. I was at the market the other day and found tiny ones that were just divine! This is a recipe that I make for my two year old grandson who adores avocados. I add garbanzo beans for protein and fiber, and a little CoCoFir for probiotic benefits.
1/2 avocado - about 1/3 cup
3 tbsp muun chi Lemon Turmeric Chia Pudding
the juice of quarter of a lemon
A splash of muun chi Golden Turmeric Kvass
1 garlic clove
a handful each of parsley and dill chopped fine
Place above ingredients in a blender to make a dressing. Set aside.
Mix dressing with
1/2 chopped apple - with the skin
1 1/2 c cooked and mashed garbanzo beans
2 scallions finely sliced
salt and pepper to taste
Once the mixture is of spreading consistency, serve on your favorite ancient grain bread or with crackers. This spread may also be used on top of a salad or to stuff a tomato. Try small stuffed tomatoes. Perfect for small fingers or served at a party. Enjoy listening to your gut sing!
