Mango Lime Salsa

I found the key lime and mangos at the farmers market to be perfectly ripe, so I decided to combine them to make a refreshing salsa. This is a crunchy salsa with a little kick. You may choose to add it to a salad or serve it with some veggie chips. My grandchildren loved it!


1 cup finely chopped ripe mango

1 finely chopped red bell pepper

1 cup finely chopped firm tomato

1/2 c finely chopped red onion

1 small finely chopped jalapeno

1/4 cup finely chopped cilantro

1/2 c muun chi key lime chia pudding

1/2 tsp sea salt

1/4 tsp black pepper


Combine all the ingredients in a mixing bowl and garnish with some extra chopped cilantro. This is an easy salsa that is different from most and will definitely have people asking for more:)
