Warm Turmeric Chili

Not really a chili, not really a soup ... this is a dish that warms you and lets you know I love you. It is easy to make and oh so good for you. Early spring cauliflower is the best and comes in all sorts of colors. Mix it up and start including as many colors of the rainbow as you can:)

Bring the following ingredients to a fragrant simmer

1/2 c water

1 yellow onion, chopped

5 cloves minced garlic, minced

1 c celery, sliced

1 inch turmeric root, minced

1 inch ginger root, minced

1/2 tsp coriander,

1/2 tsp cinnamon

1/2 tsp cumin

1/2 tsp chili

1/2 tsp smoked paprika

Add to your fragrant base and purée in a blender

1 c white navy beans

1/2 c veggie broth

Add to your puréed slurry

1 cup grape tomatoes chopped

1 head cauliflower chopped or broccoli

2 1/2 c cooked

white navy bean or your favorite - don't be afraid to mix it up

1 c muun chi CoCoFir

1 c veggie broth

Finally you want to stir in your favorite greens

2 cups of a mix of kale, spinach, Swiss chard , chopped

Stir all your veggies together and simmer for another 20 min.

Serve over your buckwheat or quinoa, both of which are naturally free of gluten. Close your eyes, smell the love as you share health with your friends:)

I love to serve with muun chi CoCoFir and some spicy Sweet Immunity.
