Grilled Spring Veggies

There is so much I love about warmer weather! The grill is just the best - You get to be outdoors while cooking! I like to keep the veggies as fresh and simple as possible . Head to the farmer’s market and buy every vegetable you can find.


Kohlrabi

Broccoli rabe

Zucchini

Eggplant

Carrot

Fennel

Peppers

Asparagus

Beets

Cauliflower

Olive oil

High mineral salt


Slice the veggies so they are all about the same thickness. Toss them in the olive oil and salt mix.

Lay them on a hot grill (preheat 10-14 min)-

Kohlrabi, beet and carrot take the longest so put them on first. - 12-15 min

Asparagus, eggplant and zucchini



You want the veggies to be firm on the outside and not mushy on the inside. They should have a nice grilled char on the outside. Arrange in clusters with fresh garnish of flowers and veggie clusters.


You may want to serve with a dish of muun chi Fermented roots or fresh hummus.
