Now that I'm thinking about my brother and his heart, I decided to make a soup made with beans. Beans are not only a wonderful source of protein, but they also help reduce cholesterol and are packed with fiber.
I love to cook my dried beans in an instapot. It's a great way to live on a budget and ensure that my beans are lectin free.
3/4 c cooked white navy beans
3/4 c cooked red adzuki or kidney beans
3/4 c cooked garbanzo beans
Set aside
Combine
1 1/2 c chopped white onion
• 2 c chopped celery
• 2 c chopped carrots
• 2 teaspoons extra-virgin olive oil
• 4 to 8 cloves chopped garlic
• 1 teaspoon red pepper flakes
Take half of the onion mixture and purée it with 1 c of the combined beans and 1 c of the veggie stock.
Pour the resulting slurry in with the following ingredients:
3 c vegetable stock
• 14 oz chopped or stewed tomatoes
• 1 ½ cups cubed potatoes, cooked the day before and cooled
• 1 teaspoon dried oregano
• 1 bay leaf
• Salt and pepper to taste
Simmer all of the above and serve with lots of smiles!!!
