I learn so much from my friends and customers. This is just one of the soups I wanted to share with you.
It’s a combination of sweet and savory. Add a chopped apple since it’s apple season and your quercitin levels will rise. I’ve packed some asparagus as well so we keep expanding the diversity in our guts - the secret to a healthy life!
Combine the following ingredients
1 medium yellow onion, chopped
3 chopped garlic cloves
1/2 c rhubarb
1 inch chopped ginger and turmeric
(or use 1 T muun chi Sweet Immunity)
3 medium sweet potatoes - chop with peel. I like combining the Japanese sweet potatoes and the traditional
1 red apple with the peel on and chopped
1 teaspoon ground coriander
½ teaspoon smoked paprika
1 teaspoon muun chi Golden Kvass
3 to 4 cups veggie broth
1 c cooked white navy bean
After the potatoes have softened, about 30 min, mix with an emulsifier or blender.
Add to the soup
1 c chopped asparagus
1 c coconut milk
1/2 c muun chi CoCoFir
Simmer for another 10 min.
Garnish with your favorite autumn herb or peels.
I love it with chopped lemon peels or cilantro.
