This is a go to chili that will have your friends wondering if it’s really vegan. I love making it for friends because it’s so delicious and people love it, even my meat lover friends! Ahhhh the good ol’ American tradition of watching football with friends and eating chili!
I always have a pound of my vegan go to “ground meat”. This “meat” tastes like the real deal and is actually really good for the heart and gut!
1 c roughly chopped walnuts (do not over grind… you don’t want the walnuts to become mealy or mushy)
1 c cooked black beans
Blend these two ingredients together to make a simple crumble. Set this aside.
In a big pot add and sauté til fragrant
2 T olive oil
1 med red onion, diced
2 T muun chi fermented roots
2 lbs crushed tomatoes
1 zucchini diced
1 yellow pepper diced
3 T chili powder
1 T ground cumin
1 tsp smoked paprika
1 T raw cacao
1/4 tsp cayenne pepper
Add the crumble to this mix and simmer for 10 more minutes on low.
Add to this tomato mix:
2 c cooked black beans
2 c cooked kidney beans
salt and pepper to taste
Let all the flavors mingle for another 20 minutes Serve over your favorite grain or simply as is. You may choose to make a cheese crumble made from cashews and nutritional yeast.
