Summer Slaw

There’s something wonderful about summer fruits and veggies!! I think nature wants us to stay hydrated and our vessels flowing with oxygen rich blood during the last month of summer. Try this summer slaw for a midday meal or a sunset picnic…just make sure you bring napkins to keep the juices from staining.


Combine the following:


1/2 red or green cabbage, shredded

1 large beet, shredded

1/2 c chopped dark red cherries

1/2 c chopped shallot

1/4 c chopped fresh parsley or basil


Dressing:


1 T balsamic vinegar

3 T muun chi classical kvass

1/4 c extra virgin olive oil

2 T muun chi lemon chia pudding

1 T muun chi sweet immunity


Blend til combined adding salt and pepper as needed.


Toss the dressing with the veggies and sprinkle pumpkin seeds on top to serve. You may choose to roll this in your favorite wrap or on top of a taco. The juices from the beets and the cherries make for a true reminder of nature’s expansive gifts. Enjoy this dish with friends and family as you share love.
