Rice Pudding with zero rice

When it’s hot outside, you want something cold. Instead of reaching for a dairy ice cream, I returned to my childhood days when my mom would make me a rice pudding … with sugar! But instead of sugar try using apples and instead of rice try using cauliflower:)


I hope you love this dish as much as my grandbabies loved it!! Super good for the gut and for the microbes that will help you fight infection during these autumn months.


4 c riced cauliflower

4 c chopped apples with the skin

1/2 c applesauce unsweetened

1/2 c coconut milk

1/2 c raisin, goji berries, chopped dates or some

combination

1 T cinnamon, nutmeg and clove combination


Put all these ingredients in an instapot for 5 min on high or simmer for 40 min on the stovetop.

Place the pudding in the fridge, when cool add


1/2 c muun chi CoCoFir


This is such a nutritional treat. It’s packed with fiber and choline, which is essential for cells and the nervous system. This is a terrific autumn treat as the apples are at their best!


I love to top the pudding with fresh chopped apples and pecans. Enjoy with family and friends and smile as you feel the healing power of real food!
