Watermelon “poke”!

There are some amazing father figures in my life. I want to thank them and honor them. I wouldn’t be whom I am today without their guidance and wisdom.

I am probably like no one you’ve ever met. I can be quirky, fun, silly and adventurous. Yes, I like to try things you could never imagine ... like turning watermelon into poke since I don’t eat fish or meat.


Here’s how I made poke without the fish:


I like using my coconut milk whey in place of cooking wine. It has a small percentage of alcohol and a ton of great microorganisms. I mixed the whey with sesame oil, coconut aminos, garlic, ginger and a date and then soaked my cut up watermelon in this divine concoction. Wow! Made some cauliflower rice and topped it with edamame, slivers of beet, carrot and cucumber, added my “poke” and some avocado. I then sprinkled it with some black sesame seeds... it was so yummy I forgot to take a photo! Next time, I promise:) In the meantime, I’m busy bottling this concoction to give to my favorite dads for Father’s Day! A special Father’s Day marinade:)
