One Pot Comfort Pasta

Today’s recipe is honor of my dad’s miraculous turnaround. Welcome back Dad! I should mention that news of my daughter being pregnant was on the day when he decided to try and sit up, eat a bowl of his favorite muun chi CoCoFIr, and to announce, ‘maybe I will live another year.’ ahhhh the joys of living, family, favorite foods and babies!


One Pot Comfort Pasta


Bring 6 cups of water to a boil, add a box of your favorite gluten free pasta. I used Modern Table Rotini - made from lentils, rice and peas, 20 grams of protein


One bunch of asparagus - chopped into bite size pieces


Cook the pasta 8 - 10 minutes, add the asparagus after 4 minutes, drain and save 1 cup of the pasta water. Do not rinse.


Mince 1 onion and combine with

2 crushed garlic cloves,


Add to


2 T. olive oil over medium heat

1 tsp minced rosemary and thyme blend, salt and pepper to taste.


When fragrant, add

the cup of pasta water and

One chopped yellow squash

Saute for 4 minutes


Add

juice of one lemon

1/2 c of muun chi Scallion Fauxmage

1/3 c raw hemp seeds


Add

the pasta and asparagus


Stir and serve with grated lemon peel. There’s something about a bowl of pasta that warms the heart and soothes the soul. We missed you dad! Glad you decided to keep on living and enjoying family and your favorite foods.
