Cabbage, Kale and Lemon

You may had some leftover cabbage after the St. Patty day celebrations…. I did! Cabbage is so good for your gut! I decided to make a salad that was all about goodness for the gut while feeding the akkermansia bacteria in the mucosal lining.


1/4 head green cabbage

1/4 head red cabbage

1 T muun chi Fermented Roots

2 green onion stalks, chopped

1 bunch dinosaur kale

1 c cooked canellini beans

1/4 c muun chi Lemon Chia Pudding


Chop cabbage into thin strips. Add cabbage to the scallion and Fermented roots. Stir til slightly limp but not mushy. Add the beans and the Lemon Chia sauce. The dressing adds a nice lemon kick to this crunchy salad. Enjoy warm or cold. Slice an avocado drizzled with the Fermented roots and serve it with the salad. Enjoy!
