Creamy Avocado Dressing with a Kick

Avocados are packed with all kinds of goodness! I use it in place of butter in lots of my baking. Using it in a dressing adds to a thicker consistency and pairs well with the CoCoFir. This dressing is high in good monounsaturated fats that serve to help lower LDL cholesterol without affecting the good HDL levels. Avocado is so good for potassium, which is a mineral that regulates nerve function and reduces muscle cramps. There is actually more potassium in an avocado than in our good old banana.


1 ripe avocado

1/2 c CoCoFir

3 T extra virgin olive oil

1/2 c chopped fresh dill

Juice of 1 lime

1 garlic clove smashed and chopped

1 or 2 jalapeños, seeds removed if you prefer not too spicy, chopped

salt and pepper to taste


Place all these ingredients in a blender and whirl until smooth. I use this dressing on cold potatoes for a refreshing potato salad served on a bed of spinach. I also love it on a bed of zoodles that have been slightly roasted in the oven with avocado oil and bits of crushed garlic. Chop up some fresh tomato and mix in the dressing. Finish fresh chopped dill sprinkled on top. Divine. What a great way to get your happy microorganisms multiplying and flourishing in your gut!
