Colorful Kale Salad


If you live in Southern California, you are spoiled with the vegetables and fruit that are still around. If you live elsewhere, think  about substituting some colorful root vegetables in place of the strawberry.  One of our muun chi friends stopped by to share with us some of the last of the most divine strawberries ever from Harry’s Berries at the farmer's market! I had to include them in this week’s recipe.


1 bunch of your favorite kale, torn into bite size pieces

(I like to massage the kale with fresh lemon and olive oil and let it sit while I cut the other ingredients)

1 avocado, sliced

6 strawberries sliced lengthwise

½ an apple cut in slivers

1/3 c chopped pistachios

1 tsp hemp seed or muun chi Super Seed Crunch

 

Dressing:

2 T lemon chia pudding

2 T Olive oil

Salt

Pepper

Dash of muun chi Fermented Roots

 

Mix the dressing and toss with the veggies. 

Kale is always a great make ahead salad with so many wonderful nutrients.  Enjoy!
